Simplest Chicken Curry
Chicken curry can't get any simpler than this! Don't go by the looks of it, I can assure you...its delicious!
Ingredients:
- Chicken (fresh or frozen) 500 gm
- Curd or Yogurt 125 gm (1/2 cup)
- Medium sized onions 2
- Green chillies 2
- Ginger garlic paste 2 tsp
- Red chilli powder 2 tsp
- Cumin powder 2 tsp
- Turmeric powder 1/2 tsp
- Garam masala 1/2 tsp
- Water 350 ml
- Vegetable Oil 2 tbsp
- Handful Mint leaves
- Handful Curry leaves
Method:
- If you have fresh chicken, Clean it properly. If you have frozen chicken, defrost it to room temperature and then wash it properly
- Put the cleaned chicken in a bowl. Add red chilli powder, turmeric powder, coriander powder, garam masala, salt and yogurt to it. Let the chicken marinate in the spices for about half hour
- Put a sauce pan or wok or kadhai on medium flame and add oil. Add green chilli, curry leaves and onions to it. Add a quarter of mint leaves to leave its essence in the frying onions.
- After the onions turn translucent to light brown colour add ginger garlic paste and sauté the mixture for about a minute or two
- Add the marinated chicken to the onion mixture and fry it on a high flame for about 5 minutes
- Add mint leaves to the mixture
- Add water and keep the flame high for another 5 minutes
- Reduce the flame to low and keep it simmering for about 15-20 min
- You can keep it on the low flame for more duration until the gravy reaches a desired thickness
- Serve the hot curry with a plate of rice
P.S. You can add more red chilli powder or green chillies according to your spice levels
